Ibagué
is the capital of Tolima, which is a well known coffee producing
region of Colombia. This particular coffee comes from a farm well
off the beaten path of other Tolima's, so we were very excited when
we were able to sit down and cup it.
Cupping Notes: sweet citrus melded with a pleasant,
creamy, mellow body. Strong hints of apricot, plum, and peaches
surface as the coffee cools, leaving a pleasant aftertaste.
.Roasting Notes: Don't roast past medium. We like
it at City + (before 2nd crack!) to bring out the maximum amount
of flavor. |
