Papua New Guinea - Wau Smallholders Co-op
Grown on the Eastern Highlands, the Wau (Wah-oo) cooperative coffee isgrown at about 5,300 feet above sea level. The trees consist of mostly bourbon, typica and arusha varietals and the beans are wet processed. Makes for a solid espresso either as a single origin or blended with a small amount of a more acidic coffee, such as a nice Guatemalan. Superb when brewed using a pour-over method.
Cupping Notes: earthy spice, pine, mild stone fruit. moderate clean cup, medium to full body. Mellow cocoa notes. Sweet lingering aftertaste.
Roasting Notes: City to Full City. A lighter roast will bring out delicate sweet wine notes.
