Brazil Red and Yellow Icatu- Daterra Farms

This Rain Forest Alliance Bourbon Collection from Daterra Farms is a blend of the fruit from red and yellow bourbon trees. It has a profound sweet acidity is reminiscent of a perfectly developed fine wine. Delicate finish and clean. Hints of sweet citrus and light lemon flavors (if not roasted to dark!) add delicate character to the cup.
This coffee is particularly suitable for espresso and cappuccinos.

Suggested Roast - Medium. For something different, try stopping the roast slightly before 2nd crack. The natural full body combined with a light acidity will result in a distinct sweetness coupled with a citrusy snap that is not overpowering.

Recommended Use: Light roasted is very nice for drip or press-pot. Medium roast for espresso. Roast it too dark and the distinctive fruitiness disappears, and the finish becomes somewhat bitter.
