El Salvador Finca Matalapa Estate

Finca Matalapa is in what is referred to as the Liberated area, not far from the capital of San Salvador, on a west-facing slop ranging from 1200 meters up to the ridge top at 1350 meters. This region is renowned for the full body and fine acidity of its Strictly High Grown coffee. Matalapa which loosely translated from Nahuat means “land where rivers are born”, true to its name, has 21 fresh water springs which feed into the El Zope river. It is situated facing the Pacific Ocean whose gentle mists and occasionally fierce winds, probably account for its unique micro climate.

Roasting and Cupping Notes:

Chocolate aroma, sweet and bright citrus acidity,, caramel, honey, sweet lime and grapes. Holds up well to a dark roast as most SHG (Strictly High Grown) coffees do. Works very nice as a sensory "tickler" in espresso blends.
