Ayehu comes from a farm in the fertile highlands of the Amhara region
in Northern Ethiopia. It grew between 1,700 and 1,800 meters above
sea level and is Rainforest Alliance certified. Under the management
of Horizon/Ethio the growers practice sustainable farming, growing
coffee in a manner that is good to the environment and its inhabitants.
The farms and surrounding areas are home to nearly 100,000 people
who live and work on the plantations.
Roasting Notes: Works very
well as a light roasted coffee. We seem to like a light-medium roast.
The appearance of uneven roasting is the norm for these beans and
has no effect on flavor. Proof is in the cup!
Note: This coffee, like most high-end Ethiopians,
should be left to rest for 48 hours for the flavors to fully develop.
There is a distinct change that occurs in the 2nd 24 hour period.
Cupping Notes: Intense aroma.
Sweet, clean red berries, dark chocolate flavors. Silky body.
