Mokamba
is a blend of coffees from three growing regions in Ethiopia: the
Kambata region, known for the production of ginger, and special
preparations from Sidamo, and Wolyata. The coffee cherries are Arabica
heirlooms grown at altitudes from 1,500-1,800 meters above sea level.
This is a sun-dried specialty
coffee that's been processed and sorted through several times with
a resulting amazing flavor profile. It is delicate but deep and
resonantly intricate. One can detect notes of dark chocolate with
hints of sweet berry and a nice creamy body.
Cupping Notes:
Aromatic rosewood (wet break), Grapes, chocolate, light berries,
creamy body.
Roasting Notes:
Anywhere between light and medium. Darker (up to full city but not
beyond) intensify chocolate notes, but at a cost to the berry-ness. |
