Ethiopian Sidamo Shanta Golba

Organic and Fair Trade Coffee


Coffee from the Sidamo province can either be processed as "washed", or "natural" also known as sun-dried. With the natural process, the seeds (future coffee beans) are left to sun-dry in the fruit. This Sidamo is Washed. The result is profoundly different that it's natural processed counterpart, with more fruitiness and less earthiness shining through in the cup. In other words, washed is cleaner tasting, brighter, but with a little less body to it.

Cupping and Roasting Notes

Rich, dark fruit such as blackberries with "sweet lemon" blossom tones becoming more pronounced as it cools (note: It sounds like an oxymoron to say "sweet lemon", but that's the only way to really describe it. Think of lemon meringue pie maybe?). Nice body and mouthfeel.

Roasts nicely right up to full city and beyond if being used in an espresso, but the sweet spot seems to be City ++ (no more than 20 seconds into 2nd crack).
