Over 150 years old, Finca Agua Tibia is located in the mountains 25 km from Guatemala City at an altitude of 5000 feet. Palo Alto Azul translated: "Blue Tall Tree". The entire farm is planted with shade-grown Bourbon with harvesting, processing and drying being done manually. Roasting Notes:
At a the lighter end of a Full City roast, there is a nutty edge with light acid and dominating chocolaty notes with full fruit undertones.
This coffee also holds up quite well at a French Roast, for those who like darker style roasting. The overall profile becomes richer and fuller with spice notes with an even deeper chocolaty edge to it. Very nice sweetness that is complemented by a full body. The nutty edge adds an interesting bit of depth to the cup.
