Mexico produces large quantities of sound but somewhat unremarkable coffee, most of which is good fit for conscious blending and dark roasting. Good, “high-grown” or Altura coffees, such as this one, from the Custapec Valley of the state of Chiapas, Mexico, are medium bodied and nutty. The better examples have a milk chocolate like tang and delicacy. Small amounts of world-class coffee with much greater acidity and flavor intensity are produced in the mountains of Oaxaca, Veracruz and Chiapas.

Grown on an estate farm in the region of Sierra Madre de Chiapa (very Southern part of Mexico). The estate grows this coffee under the canopy of shade trees, allowing dozens of bird species to exist in their natural habitat.

Cupping Notes: Moderate-to-intense dry/wet aroma. Roasted almonds and cocoa powder. Sweet with pleasant aftertaste.

Roasting Notes: City ++ to full city is where we like it, however they are a dense bean and hold up well to dark roasts, if one is so inclined.
