Description
La Fany is a family-owned sprawling estate farm that has been producing high quality coffee for over 150 years. The specific bean type of this coffee is a natural (sun-dried) red bourbon bean. The aroma of this coffee precludes elegant flavors found in the cup. Caramel, light chocolate, grapes, and nice body describe the cup.
Roasting notes: Because of the natural dry processing of these beans, they create a little more chaff than usual. This is perfectly normal and has no bearing whatsoever on the quality of the beans. We serve this at our local coffee house on a regular basis and get a lot of great feedback from our customers. One caveat, because of the extra chaff, make sure to clean out the chaff collector on your roaster before and after roasting these beans. Our best results are roasting to a City ++ (light-medium more towards medium roast). This brings out a strong, sweet, pleasant acidity. If your roaster has temperature control, turn it down just a bit lower than normal to prevent tipping.
